Cross grinding should only be done when there are nicks and gouges that can not be removed by the finishing wheel.
Cross grinding should not be done to remove a bad sharpen, rust on the blades, or to change hollows.
Normally 2 passes is sufficient, and you must be careful to apply even pressure and not round over the toe and heel.
Always perform the ring test before installing a grinding wheel. Put your finger through the hole and suspend the wheel. Then tap the wheel with your knuckle or a screwdriver. If it rings like a bell it is good to use. If you hear a “thud” it is cracked and must be discarded.
